Pass the spirits, honey.

Wayward Distillery was the first in Canada to make all of its spirits from 100% B.C. honey, and they have since expanded their craft to include a few special grain based spirits as well.

 
 

To create their delicious spirits, they start by using honey from Golden Clover Apiary located in Tomslake, BC, water and yeast to create a ferment which after a couple of weeks becomes mead - or honey wine. The mead is then distilled to create the base for most of Wayward's spirits. The Head Distiller Laura Carbonell handles these processes but everyone including her husband Curt, Dave, the CEO and Sara (Manager) help out when needed. To make their Unruly Gin, Wayward uses vapour infusion by essentially boiling the spirit and allowing the vapours to pass through a giant "tea bag" full of botanicals, comprised of juniper, coriander, orange peel, green cedar tips, lavender and sarsaparilla root. Wayward also makes a variety of other spirit including Depth Charge, a coffee and cacao vodka, the crowd favourite Krupnik, a beautiful blending of honey, orange and lemon peel, cinnamon, nutmeg, cloves and a combination of other "mulled spices" and the Drunken Hive Rum which starts with caramelized honey mead and after distillation is aged in bourbon barrels for well over a year.
